Cows first
A comfortable, well-fed cow gives good milk. Everything else follows.
Yards, not miles
Milk crosses the yard to the creamery. It is never in a tanker.

Small batches, watched all the way, because milk does not forgive neglect.

Spring milk is not autumn milk, and the cheese should say so.
